Peter Rowley is head chef at Amba restaurant and bar in Hale.

Tell us a bit about yourself?

I was born and bred in Cheshire. When I was a teenager I got a job as a cellar boy at Bells of Peover in Knutsford and quickly realised that the hospitality sector was the place for me. I went on to study hotel management at Mid-Cheshire College whilst training in Bells of Peover’s kitchen. I loved creating new dishes and flavours and jumped at the chance when I was offered a chef job at Bells.

I’ve worked in kitchens across Manchester and Chester for over 15 years and developed an expertise in gastro pub style dishes. Two years ago I joined Amba as head chef and it’s been exciting to bring my skills and ideas to its kitchen.

What are your passions?

Food of course! I love to eat out and experience new tastes and flavours. Every dish I eat I think about what could be done to enhance it or what new element could be added. I really admire chef Richard Corrigan; he creates simple, clean food.

The food I am most passionate about making is ice cream and I’ve just ordered a new ice cream maker which I can’t wait to start experimenting with. I definitely push the boundaries when it comes to flavours; my favourite is liquorice. I like to try ice cream flavour combinations no one would ever think of. Last Christmas we developed some special seasonal Amba ice creams- sage and onion stuffing, tinsel and cigar and bourbon – they went down a treat.

My other passion is my sporty BMW convertible, if I’m not in the kitchen I’ll be whizzing around the roads of Cheshire, shades on and wind in my hair.

If there was anyone on the world you could cook for, who would it be?

That’s easy - Steven Gerrard, in fact the whole of the Liverpool football team.. I’d serve the boys something healthy but hearty, something like a big Asian roast duck and noodle soup.

What do you eat at home?

Very little, when I’m not working in the Amba kitchen I like to eat out. You’ll find me eating out in restaurants in the North West and in London at least twice a week. I’ve lived in my new flat for seven months and have eaten there once; if I do cook it will be either an Asian soup or curry.

However, I am a bit of a smoothie addict and will whip up one each morning before I leave home.

Loves

I love animals and travelling and often try and combine the two. I tend to go on holiday at least four times a year and will go to countries which have interesting wildlife. This year I’m planning to go to Sir Lanka to see the elephants. My travels also inspire my dishes and I love to uncover new ingredients from around the world.

What do you do to relax?

I read detective novels to unwind – there is nothing better than to immerse yourself in a good book. I also spend a lot of time planning my next holiday, deciding which country to explore next.
