Garry Banim is Catering Manager at The Wine Kitchen, in Lymm. Here he tells us about what inspires him.

Tell us a bit about yourself. When did you first get involved in cooking?
I first started getting interested in food during my time in the hotel industry over 20 years ago. I trained as a manager in all departments and developed a passion for the food and kitchen side.
I am inspired by sourcing the best produce and ingredients and seeing our customers appreciate and enjoy this.
What is your signature dish?
Beef Bourguignon with specially sourced meat – our family favourite!
If there was anyone in the world you could cook for who would it be and why?
I have always had respect for Gordon Ramsey and would relish in him enjoying a meal I have prepared.
What do you eat at home?
Traditional English style food, like a lovely roast dinner.
What is the kitchen ingredient no-one should be without?
A good homemade stock – the basis of every good dish.
If you could dine at any restaurant in the world which one would it be?
As I said, I admire Gordon Ramsey and would love to dine at one of his many restaurants, with Pétrus being my first choice.
What would you eat for your last meal?
I am not entirely sure I would be eating! However, a good cheese sandwich with locally sourced cheddar and freshly baked bread - and a nice glass of lager.
What do you do to relax?
Away from work there is nothing I love more to do than spending quality time with my wife and daughter
